Baursak is a traditional flour product of Kazakhs and all Turkic peoples.
As a rule, it is prepared from unleavened or yeast dough in the form of small doughnuts (diamond-shaped or round), made by deep-frying in a cauldron. There are also recipes for curd baursaks. It is usually served as a Supplement, for example, to shurpa, or to tea (for Tatars only to tea, for Uyghurs to the tea drink atkanchay). Baursak is an indispensable attribute of the festive dastarkhan. Plays an important role in wedding ceremonies and other peoples. In the wedding tradition, the groom's parents brought a dish of baursaks as a wedding gift.In Almaty, on September 7, 2014, during the celebration of mother's Day, a Guinness book record was recorded: 856 kilograms of baursaks were baked. The event was held in the form of a culinary match between teams of mothers-in-law and daughters-in-law. Seven real couples took part in the match.
